Monsoon

Monsoon has been serving Mangalitsa and Mangalitsa-Berkshire pork the last few days.I just delivered them a bunch more Mangalitsa-Berkshire pork.

Johnny, their chef de cuisine, told me they're getting their immersion circulator in a few days. They be able to cook Mangalitsa sous vide, which is exciting. For one, they think they'll be able to use the Mangalitsa belly. Somehow, the high fat content made it not work with their usual treatment.
