Székely (
pronounced [ˈseːkɛj]) is part of Romania. The Székely people have lived there for about a thousand years. People have raised Mangalitsa pigs there, along with breeds like the
Bazna, derived from Mangalitsa. Here's how they traditionally slaughter pigs
there.
Lucian Marcu, pictured above, is a butcher from Székely. Amateur pig slaughter and processing is
still a big deal in Hungary and Romania.
