Wooly Pigs will have its first batch of salami ready, in approximately 50 days.
Wooly Pigs's first salami will be a Hungarian-style salami: paprika-spiced with light smoke. My first taste of Mangalitsa was some Hungarian salami, by Pick.
It will be interesting to see how good we can make it. One big problem will be getting the right paprika.

And will it be available from Foods in Season?
If we can produce an excellent salami in quantity, Foods in Season should carry it.
Unfortunately, it isn't clear how long it will take to get there.
Right now, we are just doing our first batches, which are small and experimental.
