Mangalitsa Three Ways

The Four Seasons San Francisco's tasting menu has Mangalitsa (from Wooly Pigs) done three ways:
Hungarian Mangalitsa Pork and Apples
Crisp Belly, Roasted Loin, Braised Shoulder

Those are from the 3 major parts of the pig that we are marketing in SF: loin, belly and shoulder butt.
